Reduced Carb Potato Substitutes

I cant tell the difference from these and real potato pancakes. Come inside for more Non-Spudly Goodness.


 Suitable Veggies For Experimenting With

Spaghetti Squash
Cauliflower (no recipes shown in this post. Theyve been done to death)
Kohlrabi
Peeled, deseeded Zucchini/Yellow Squash
Parsnips
Pureed White Beans or Garbanzos
Konjac Corm



Hash Browns

6 Large Parsnips, Washed, peeled
3 Large Kohlrabi, Washed, peeled
4 Yellow Squash, Washed, peeled, deseeded

Run all veggies thru a Salad Shooter Pro on the large holed attachment.
Then mix all veggies together and sprinkle with 1-1/2 teaspoons salt.
Let sit for 30 mins. Squeeze all the water out as much as possible and rinse under cold water and squeeze out again.

Mix 1 t salt with 1 t Amoretti Potato flavoring, 1 T onion powder and 1/2 cup cellulose powder or Besan and mix with the veggies thoroughly and fry in a pan in butter and oil....
This will NOT crisp up.  :(

Dried Mashed Fauxtatoes To keep in the cupboard.

Run all those same veggies thru a Salad Shooter Pro on the large holed attachment.
Then mix all veggies together and sprinkle with 1-1/2 teaspoons salt.
Let sit for 30 mins. Squeeze all the water out as much as possible and rinse under cold water and squeeze out again. Mix 1 t salt with 1 t Amoretti Potato flavoring, 1 T onion powder and 1/2 cup cellulose powder and mix with the veggies thoroughly

Dehydrate all in a food dehydrator overnight until crisp
Pulverize in a Vitamix
And keep in your cupboard in an airtight container.
 Mix 1 cup boiling water, 4 T butter, and 1/2 cup dried milk powder
And add to the dried veggie powder, run thru a blender to make it smooth, adding extra boiling water to make it the consistency you like.
Serve with extra butter and gravy



Fauxtato Pancakes

2 Spaghetti Squash, seeds removed
Oil

Cut both squashes in half and oil a baking pan and place them cut side down and bake about an hour.
Let cool and scoop the inners out and refrigerate overnight.
Pour off any liquid.

Mix the flesh with
1 t salt
1 t Amoretti Potato flavoring,
2 T onion powder and
1/2 cup Besan
and mix thoroughly.

Fry this mixture in a frying pan with butter and oil
Flip, brown the other side and then place on a baking sheet and bake in a 350oF oven about 30-45 mins.

Serve with Sour Cream


Mashed Fauxtatoes Part 2 (THE BEST)

2 Large Cans White Beans or Chickpeas, Drained
1/2 stick Butter
2 cloves mashed roasted Garlic
1/2 t onion powder
1/2 cup Dried Milk Powder
Salt and Pepper, to taste
1 t Amoretti Potato flavor
HOT BOILING WATER

Boil the beans in plenty of water til they are heated thru.
Quickly drain and place in a bowl with the rest of the ingredients (except boiling water)
With a hand mixer, puree till smooth, use the boiling water if the mixture gets too thick.
Serve with extra butter, salt and pepper and gravy.
Super nutritious, and full of fiber and protein.

Now to the expensive Fries

2-3 Devils Tongue Corm (Expensive - eBay, click to see pic)
 Oil
Salt

Wash and scrub

 Completely peel and remove bruises and blemishes


Cut into fries or homefry cubes

Fry in LOW temp oil once to cook the inside, remove let cool about 2-3 mins then fry in high temp oil to crisp.

Drain and immediately salt them and season.

This is the root veggie that those SHIRATAKI noodles are made out of.
DO NOT MISTAKE THESE FOR INDIAN ELEPHANT YAM/ SURAN!
