Sugar Free No Gas Peppermint Patties
1/4 cup water
1 packet Knox Gelatin
1 cup Maltodextrin
Peppermint Oil
Peppermint Oil
Sprinkle
the gelatin over the water in a small bowl, wait 5 mins then microwave
30 seconds to 1 minute to dissolve, let cool till lukewarm.
Mix the maltodextrin and Sweetener thoroughly in a bowl, then add the gelatin and stir thoroughly and break up all lumps.
Add as little or as much Peppermint oil as you like.
Place in the refrigerator to thicken.
Roll balls half the size of ping pong balls and then flatten to discs. Lay on a plate covered with wax paper, and let dry, Flipping over occasionally. About one day.
Break up an entire box of unwrapped ChocoRite dark chocolate (from Walgreens Diabetic section or online) into a bowl, place into the microwave and nuke for 30 seconds. Take it out and look at it, do you think you could stir it till its completely smooth? If not nuke for 30 more seconds (this is the limit do not nuke any further) Now take it out and stir it till its comppletely smooth and all the little chunks are melted.
Dip the dried discs into the chocolate, flipping to coat completely, place back on the wax paper, and put into the fridge to harden.
Then you can take them out and they are shelf stable and wont melt outside the fridge.
Eat and enjoy.
You can make 6 Patties per box of chocolate, So this recipe makes 12
