Sugar Free Reduced Carb Pate A Choux Dough

    1 stick butter, cut into cubes
    1 t Swerve
    1/2 t salt
    1 cup Carbolose Flour
2 T Wheat Gluten
    4 eggs
1 cup water
Filling of choice

   Preheat oven to 375oF
Line 2 cookie sheets with parchment baking paper

Mix the flour, swerve, wheat gluten and salt.
In a pot melt the butter and water over med heat, till it boils

Stir in the flour mixture and vigorously stir until combined and it all clumps together and a film of batter forms on the bottom. 

Remove from heat and let cool a little.

Add the eggs one at a time, combining thoroughly between each.

   Either spoon the batter in dollops onto the parchment, or put into a pastry bag and form eclairs, cream puffs, or Croquembouches.

Bake 30 mins.



Cool, open or stuff with vanilla pudding or chocolate whipped cream
