No Sugar Added Ice Cream Shop Style Maraschino Cherries

2 pints Yellow-Pink Royal Anne Type Cherries, Triple Washed
1 t Citric Acid
1 t Food Grade Calcium Chloride
1/4 t Potassium Metabisulfate
Boiling Water to cover

Rinse out a clean container in vodka, then rinse with water, add the dry ingredients, then the water, then the cherries, put the lid on and shake.

After and before

Let sit 1 hour till they all turn completely yellow,, Drain, wash 5 times.

Pit them with the stems on

Place back in jar

Make the syrup.

3 cups water
2 cup Tagatose
2 T Amoretti Maraschino Cherry Flavor
1 bottle red food coloring
1 T citric acid
1/2 t Alum,
Dash Potassium Metabisulfate

Boil till dissolved
Add the cherries and boil for 10 mins pricking with a fork
Pour all into a glass jar.
leave on the counter till cool, then fridgerate, till they are completely red
and delicious, about a month..

Then Enjoy
