Sugar Free Oreos Or Ice Cream Samich Wafers
1 cup Tagatose
1-1/2 sticks softened butter
1/2 t salt
1 egg
1 t vanilla
1 cup Quest baking Mix
1/2 cup Resistant Corn Starch
1/4 cup black cocoa
1/2 cup cocoa
A little water if still crumbly
Put everything in a bowl and put on gloves and squeeze everything into a dough, if its still crumbly, add a little water.
Preheat an oven to 350oF and grease a cookie sheet.
You cant really roll this dough out, you need to make balls and flatten them to make cookies (or flatten a log and trim it into a rectangle for ice cream samich wafers), so do this and bake for 10 mins for soft cookies (or ice cream samich wafers) or 15 for crisp cookies.
Carefully place on a cooling rack.
To make the cookie cream
2 1/2 cups powdered Erithritol
1/2 cup organic spectrum shortening
1 t vanilla extract
Stir all together till a homogeneous mass and fill your cookies
