Acelfame-K
Acelfame K (AKA) Ace-k  or Acelfame Potassium) is a methylization of oxide of potassium  Never used as a sweetener alone, always used together with other sweeteners to masks its aftertaste. Non caloric


Agave Syrup
Agave Syrup is a sweet syrup produced by collecting and fermenting the syrup from Agave Cores. Its just as bad for you as HFCS

Algarrobina
Algarrobina is the sweet syrup of the Black Carob tree

Alitame
Alitame is similar to Aspartame, in that it is a dipeptide sweetener but it contains no Phenylalanine. It contains aspartic acid though. No calories

Amazake
Very low alcohol rice syrup liquor sometimes used as a sweetener


Amber Rock Sugar

Rock Sugar is formed when the sugar level in a water-sugar syrup blend is too high and it recrystallizes on the sides of the pot or on strings or in the pot themselves.  The Amber color s either from caramelization or when raw sugar is used in the syrup. Used primarily in tea services

Arrope
Arrope is a Spanish grape syrup used as a sweetener


Aspartame

Aspartame was originally created as a form of Chemical Neurotoxic Warfare weaponry. It is two Amino Acids, Aspartic Acid and Phenylalanine bound together by Methyl Alcohol. Unfortunately the binding method is not as secure as say, the L Sugar binds of Sucralose, so Aspartame breaks down fast in heat, some acids and time. It has no calories. Some people say it leads to neurological issues. Non caloric

Beet Sugar is the concentrated and purified, then crystalized syrup of the sugar beet. It is one of the top 2 sources of sugar in the world.

Birch Syrup  

Birch syrup is the concentrated sap from the Birch Tree. It is similar to Maple Syrup

Birnenhonig
Birnenhonig is "honey" from pears. It is the reduced and boiled down syrup of pear juice.

Brazzein
Brazzein is a sweetener from the protein of the Oubli Fruit

Brown Sugar (both light and dark) 
Modern day Brown Sugar is just white granulated sugar which has been mixed with varying degrees of Molasses.

High Maltose Corn Syrup
High Maltose Corn Syrup is corn syrup that has mostly Maltose and very little Fructose, It is less sweet than HFCS or regular corn syrup, Its is used primarily to keep hard candy hard.

Inulin

Inulin is the sweet tasting soluble fiber from the artichoke plant or the roots of the Sunflower. It adds fiber but can cause stomach upset.Non caloric


Inverted Sugar Syrup
Inverted Sugar Syrup is sugar syrup which has a component added to discourage recrystalization. Those components can be citrus juice or corn syrup.

Isomalt

Isomalt is the Sugar Alcohol of sucrose. Non caloric

Jaggery is a rough combination of Palm, Date and Cane sugar without any further processing or clarification so it sustains its brown color.. Used mainly in Indian and Asian cooking.

Lead Sugar was a popular non caloric sweetener years ago. It was made from LEAD Acetate and poisoned many people. Its totally banned.


L-Sugars
L-Sugars are real sugars which a molecule has been removed and replaced with something that is indigestible or which lets the sugar pass thru your body unabsorbed into the blood sugar as energy. One such L-Sugar is Sucralose aka Splenda

Lugduname is an extremely sweet sweetening agent not yet approved for use in foods. It is derived from Guanidine, a metabolite of protein found in URINE


Luo Han

Luo Han is the concentrated and crystallized juice of the Monk Fruit Non caloric

Mabinlin
Mabinlin is a sweet tasting compound from a protein found in a Chinese seed from the Capparis masaikai plant

Maltisorb 
Maltisorb is he French versiomn of Maltitol, a widely used sugar alcohol made from Maltose


Maltodextrin
Maltodextrin, like Polydextrose is a bulking agent  is less of a sweetening agent than a bulking adder and a fiber replacer. That being said it is slightly sweet and is added to replace some bulk lost when using artificial sweeteners in which the molecules are smaller than regular granulated sugar..It is typically added to sweeteners like Splenda to make them measure cup for cup like regular sugar.

Maltitol

Maltitol is the sugar alcohol of  Maltose. Although it has no calories, it can be known to have major stomach and intestinal issues Non caloric


Maltose

Maltose is a sweetener derived by adding a bacterial or acidic culture to sprouted bartley to change it from a complex starch to a simple sugar. It is used a lot in beer making and bread making.

Malt Syrup

Malt Syrup is Maltose that has been made into an unrefined syrup

Mannitol

Mannitol is the Sugar Alcohol of Fructose. Non caloric


Maple Syrup

Maple Syrup is the concentrated sap of the Sugar Maple tree


Millet Jelly

Milley Jelly is a sweetener derived by adding a bacterial or acidic culture to Millet starch to change it from a complex starch to a simple sugar. Mainly used in Japan and Asia

Monellin Is a sweetener discovered in Philadelphia from a protein in the Serendipity Berry from Sierra Leone

Monk Fruit Extract is the concentrated and crystallized juice of the Monk Fruit, also known as Luo Han Guo, it has no calories.

Palm Sugar is a sweetener, either crystallized or a thick liquid, made from the sap of the palm tree or coconut palm, lightly colored and less cloyingly sweet than sugar its delicious in most anything. Used primatily in the tropics and Asia

Pentadin is another sweet tasting protein discovered in the Oubli plant, the other sweetener from this plant is Brazzein

Pilloncillo

Pilloncillos are the conical shaped cones of unrefined raw Demerara sugar processed in Mexico and South America. You grate them to use them.

Polydextrose

Raw Sugar is the free flowing granular version of Demerara Sugar. Its got some nutritional value.

Rice Syrup

Rice Syrup is a sweetener derived by adding a bacterial or acidic culture to Rice starch to change it from a complex starch to a simple sugar. However Brown Rice Syrup acts like a complex carb in your body and digests slower.

Rock Sugar

Saccharin

Saccharin is an artificial sweetener that was accidentally invented during lab experiments on Coal Tar, one of those Coal Tar derivatives, benzoic sulfimide, was sweet and tested as GRAS (Generally Recognized As Safe) by the US FDA and thus a new sugar substitute was born. It has no calories.

Selligueain A 
Selligueain Ais a sweetener extracted from the rhizome of an Indonesia  plant called Selliguea feei.

Sorbitol

Sorbitol is the Sugar Alcohol of Corn Syrup  Non caloric

Sorghum Syrup Sorghum Syrup is a syrup from fermented Sorghum kernels  Sorghum is a cousin of Corn


Stevia

Stevia is the concentrated juice of the Stevia Rebaudiana plant. It has a slight licorice taste and no calories

Sucralose

Sucralose is an L-Sugar. L-Sugars are produced with real sugar which has part of the molecule removed and replaced with another harmless molecule. In this case the molecule is chlorine.. It can bleach out some foods, it has no calories.

Sucrononic Acid 
Sucrononic Acid is another high sweetness sweetener from the metabolism of URINE. Its not allowed in food.

Sugar Alcohols (AKA Polyols)
Sugar Alcohols are NATURAL sweeteners, lower in carbs, glycemic loads and calories made from real sugars thru the process of hydrogenation ad fermentation to eliminate the body's ability to digest them. They can have varying degrees of stomach upset involved, so go slowly. .

Suosan 
Suosan  is another sweetener made from the fusion of amino acids such as aspartic acid and alanine


Sweet Cicely Syrup 
Sweet Cicely Syrup is the concentrated syrup of the root of the Sweet Cicely plant.

Tagatose
Tagatose is a sweetener made from milk, that behaves like a Sugar Alcohol but it is not..It has some calories, but no glycemic effect.

Thaumatin 
Thaumatin or thaumatins are sweeteners from the isolations of proteins from the Katemfe Fruit found in West Africa

Treacle
Treacle is the unrefined sugar cane or sugar beet syrup before the molasses has been removed and it turns into crystals and becomes granulated sugar,


Trehalose
Trehalose is a disaccharide made from mushrooms. High in calories and glycemic load


Xylitol

Xylitol is the sugar alcohol of Birch Syrup,  It has no calories and has a mild stomach effects.


Whey-Low

Whey Low is supposedly a reduced calorie sweetener that tastes and behaves like sugar yet its made from Fructose, Lactose and Sucrose....I dont get it.


Yacon Syrup
Yacon Syrup is the concentrated syrup of the Yacon root from the Andes

Volemitol
Volemitol is a natural Sugar Alcohol derived from some algaes and mushrooms.
