Curried Cheese Soup With Spinach Paneer
2 cups Milk
2 T Butter
2 T Flour
1/2 cup Cheddar
1 cup shredded Carrots, steamed till tender
1 t Curry Powder
Salt and Pepper
2 cups Chicken Broth or Vegan Chicken bouillion
Make the spinach paneer first.
When its fully set up, then make the soup
Melt the butter and then add the flour in a pot over medium, when the flour is bubbling whisk in the milk, and either 2 cups of water and a Tablespoon of the vegan stock powder or 2 cups of chicken stock.
Then add the cheese, carrots and curry powder and let cook until thickened.
Puree this in a Vitamix, Pour back into the pot and simmer a minute, taste, add salt and pepper.
Pour into bowls then top with cubes of the paneer.
