Mexi-Corn Chowder
2 T butter
2 T flour
2 cups milk
1 carton broth
1/2 and onion chopped and sauteed
1 cup white cheddar
3 cans Mexi-corn
2 roasted poblanos, diced
1 can drained baby corn sliced up
Crispy chorizo sausage strips or chorizo sausage fried till crisp
1/3 cup powdered Fritos
1 t cumin
1 T chili powder
Salt and pepper
Fry the flour in the butter in a big pot.
Add the Frito powder, cumin and chili powder and fry a minute.
Whisk in the milk and broth, then the cheese. Simmer till its thicker.
Add the corn, onion, and poblanos
And simmer on med for about 5 mins.
Serve topped with chorizo
