"Chowder" is usually thickened with crushed crackers, here, I thicken it with Herr's Potato Chips.
Seafood Chowder
1/2 pound peeled cooked halved shrimp
1/2 pound cooked Lobster
1 plastic tub Jumbo Lump crabmeat
1/2 a pack of surimi
1 bag Mussels
1/2 lb bay Scallops
6 slices Bacon. chopped (optional)
1 Onion, chopped
2 Carrots, chopped
2 stalks Celery, chopped
1 can mexicorn
1 cup Herrs Old Bay Chips, pulverized
2 cups milk
4 cups fish stock
1/3 cup Sherry
salt and pepper
1/2 stick butter
Melt the butter in a large pot, add the carrots, celery and onion and saute for 5+ mins, until translucent, Add the sherry and cook till mostly evaporated, then add the potato chips, S&P.
Stir, cook a moment and then add the milk and broth and corn.
Then add the seafood and bacon.
Simmer for 10 mins, then serve.
