Shrimp Paste Kabobs On Sugarcane Skewers

 

 Simple elegant exotic, make the dipping sauce for sure
 Shrimp Paste Kabobs On Sugarcane Skewers
 
1 lb Raw peeled shrimp 
1 eggwhite
2T fish sauce
1/4 cup flour
1/4 cup potato starch
1 t salt
2 T sugar
1/4 t red chili flakes
2 garlic cloves
2 inches peeled ginger
3 large shallots, peeled
 
Put EVERYTHING in a food processor and process on high for 6 minutes




one giant can prepared sugarcane

Drain and rinse the sugarcane, and slice 5 canes into 4 sticks each. wrap the sticks 2/3rd of the way with the shrimp paste. Repeat with all the paste.

Heat oil in a wok to 200 and fry the sticks until golden, drain on paper towels and serve 

Dipping sauce

1 T Chopped garlic
1 T Chopped chili
1/4 cup Fish Sauce
1 can Ginger Ale

Stir serve
