Keep the toasted coconut on hand to make these on the fly. Your guests will love the toasted coconut flavor!
Toasted Pina Colada
This is for a pitcher
1 bag of sweetened coconut
3 cups Water
1 whole fresh Pineapple
2/3 cup Palm Sugar
1 to 2 cups Rum
Ice
Toast the coconut in a large frypan, stirring constantly to prevent burning, remove from heat and pour onto a large plate to cool.
Toasting happens VERY VERY fast. Do not turn away or stop stirring.
If you dont wanna toast coconut, you can buy pretoasted coconut on Amazon.
When cool, put it into a Vitamix with the Palm Sugar and 3 cups boiling water.
Make sure the top is secure and turn it on high for 1 minute.
Pour this liquid thru a fine sieve into a jar or bowl.
Squeeze out every drop of liquid
Cut and core the pineapple and grill the rings in a oiled grill pan.
Set 2 aside, The rest, put into the Vitamix with Rum and the toasted coconut milk, and ice and buzz.
Serve in a tall glass with grilled pineapple garnish
