Spicy Caribbean Fruitcake With Ackee
PHO to 350oF
Grease and flour a 9x13 pan
2 cups sugar
1 Can Ackee, drained
1 stick Butter, softened
2 Eggs
3 t baking powder
1-1/2 teaspoons ground cinnamon
1/3 cup Rum
1/2 cup milk
1/2 t salt
1/4 t ground allspice
Put everything in a large bowl, and beat with a hand beater till smooth, add everything else, below
1/2 cup shredded coconut
1/2 cup chopped fresh papaya
1/3 cup chopped chili mango (Trader Joes)
1/2 cup crushed Banana Chips
1/4 cup SWEET pickled Jalapenos, chopped
1/3 cup golden raisins
1/2 can pineapple chunks, drained
1 cup chopped toasted pecans
And pour into the pan and bake 35-40 mins until golden
If you want, booze it up with more rum before serving
