How to introduce your culinarily adventurous child (or Grandma) to Kimchi and Fermented foods..
Kimchi For Children
1 large or 2 small head of napa cabbage, cleaned up, halved
2 T salt
Get a big bowl and put the cabbage in it and spread open the leaves and sprinkle salt in between the layers, using all of the salt up.
Let sit in the bowl for a few hours
Place the peppers in a Vitamix and start on 1 and Variable and slowly dial it up, until they are tiny flakes. Set aside
After an hour, feel the cabbage, it should be wilted and a lot of juice should be at the bottom of the bowl, fill the bowl up with water and rinse the salt off. Put the cabbage back in the bowl.
1/2 cup water
1 t Mochiko
1 t sugar
Mix the Mochiko, water and sugar in a pot and bring to a boil and it will thicken.
6 cloves garlic, chopped
2 inches grated ginger
1/4 onion
4 T fish sauce
3 T ketchup
Put the above ingredients in the pot and use a stick blender to puree it all, Add the pepper flakes and the below veggies and spread this in between the leaves of the cabbage and coat, load the cabbage into a suitable container and let sit on the counter for 24 hours. Then refrigerate.
1/4 cup grated radish
1/4 cup shredded carrot
2 Chopped Scallions
