Asian Seafood Funnel Cake

Seafood Funnel Cake
 
 
1 lb RAW Seafood and shrimp
1/2 cup Tapioca starch
2 cloves garlic
1 small onion
2 T fresh minced ginger
2 T fish sauce
2 nice shakes of Red Pepper Flakes
1 eggwhite
1 t salt
1 t sugar
Old Bay in a shaker


Put everything in a food processor and process till smooth.
Put into a Ziploc bag.

While a pot of oil is heating to 200oF, snip the corner of the bag and then squeeze the "batter" onto a square of parchment that fits in the pot, making squiggles, like any traditional funnel cake. 
Make 3-4
Then gently lay each into the oil
In about 10 seconds the paper will fall off, remove it.
Fry till golden on one side, flip and cook the other side. 
Drain on paper towels.
I think this will make 4

Dust with Old Bay and eat off a paper plate with cocktail sauce
