Thai Watermelon Salad
1/2 seedless Watermelon
1 bunch, julienned Mint
3 T Fish Sauce
Crispy fried shallots
2 Chopped Chilis
Liquid Coconut Oil
Chopped Roasted Peanuts
1/4 cup Lime juice
Cut the watermelon in half, then 4ths, Going under the red flesh wit the knife, free the chunk away from the rind, slice into planks.
Heat a grill skillet and spray with coconut oil and sear grill marks onto each side
Mix the fish sauce, chopped chilis, lime juice and oil
Toss the watermelon and mint
Pour the dressing over and top with shallots and peanuts...
