I had some watermelon and cucumbers left over so made this. A great soup for the beach to eat and keep your bikini body. So refreshing, light but satisfying
Mexican Sunset Soup
olive oil, for grilling
1/4 of a seedless watermelon, sliced in planks
1 tomato, halved
2 small Cucumber, halved
1 jalapeno, halved
1 red onion, chopped
3 T apple cider vinegar
1 T lime juice
salt
pepper
1 avocado, chopped
Grill Watermelon, Cukes, Tomato, and Jalapeno.
Then Puree in a vitamix, with half the onion, most of the watermelon, vinegar, lime juice and S&P.
Chill, then serve topped with Chopped onion, watermelon and avocado
