Twice Baked Sweet Potatoes

Twice Baked Sweet Potatoes

I just made two, double the recipe to make  4.

2 Large Sweet Potatoes, Scrubbed, Dried, Pricked with a fork 3 times & Rubbed with melted butter and Baked at 350oF for 1-1/2 hours or until soft when squeezed.

Put in a bag and refrigerate overnight, if not, they wont scoop correctly. The starch needs to firm up some.

Cut the top third of the top off and scoop carefully as shown

Warm the shells up on a microwave safe plate for 1 minute then warm the innards in the bowl upfor a minute, 
Mash the innards with the following 
2 T Chopped Crystalized Ginger
3/4th of a small tub Philadelphia Brown Sugar Cream Cheese Spread
Cracked Black Pepper
Chopped Smores Granola Bar (Aldis)

Restuff the Sweet Potatoes (you wont be able to use it all)

 Place all of the following in a Nutribullet and process until a crumb mixture is formed

Handful Toasted Pecans
4 Crushed Gingersnaps
1 T butter Melted

and coat the tops of the stuffed sweet potatoes and bake at 350 for 10 minutes.
Then Broil CAREFULLY for 1-2 minutes to crisp up.
