Somewhat Keto/Low Carb Branston Pickle (25 Calories, Net Carb 4.28 ---The Original Is 157 Calories And 34 Net Carbs) You Are Welcome!

 

My LowCarb Branston Pickle on a Keto English Muffin with White Cheddar...Its dark brown......and delicious.

Somewhat Keto/Low Carb Branston Pickle

 Cut all the veggies up and put in the Instant Pot

2 celery stalks,  fine dice
2 large onions, fine dice
2 large carrots, fine dice
half a LARGE swede/rutabaga, fine dice
1 Small cauliflower, fine dice
2 Granny Smith apples, peeled fine dice
4 large gherkins/pickles, fine dice
1 large Cucumber, fine dice
6 large dates or prunes, fine dice
1/2 cup of sultanas/raisins

Mix all the following together and pour over the veggies in the IP

1 small can Tomato Paste
1-1/2 T Allspice
1 T Cinnamon
1/2 t Ground Cloves
2-3 cups Allulose (No Equal, No Splenda, No Erythritol, No MonkFruit*)
1 t Amoretti Molasses flavor (Or in a Jamaican store buy Caramel Color - Like Grace Brand)
2-3 T Worcestershire
2 cups Vinegar (I used 1 cup Malt and 1 cup White)
1 T Lemon juice
1 T Ball Pickle Crisp (to help the veggies keep their shape)
salt & black pepper
 
NOTE: You should have in total 5 Quarts or 4.7 liters assorted veggies


Put the Instant Pot on saute for 2-1/2 hours on medium til thick and dark. No lid. Taste it, adjust spices and then put in jars and can as usual. Or put in freezer jam jars to keep in freezer.

 *It needs Allulose, cause Allulose becomes syrupy, Erythritol will recrystalize if boiled for long times and Equal and Splenda cant make syrup or bulk at all. Monkfruit has Erythritol...
