Somewhat Keto/Low Carb Branston Pickle
Cut all the veggies up and put in the Instant Pot
2 large onions, fine dice
2 large carrots, fine dice
half a LARGE swede/rutabaga, fine dice
2 Granny Smith apples, peeled fine dice
4 large gherkins/pickles, fine dice
6 large dates or prunes, fine dice
1/2 cup of sultanas/raisins
Mix all the following together and pour over the veggies in the IP
Put the Instant Pot on saute for 2-1/2 hours on medium til thick and dark. No lid. Taste it, adjust spices and then put in jars and can as usual. Or put in freezer jam jars to keep in freezer.

*It needs Allulose, cause Allulose becomes syrupy, Erythritol will recrystalize if boiled for long times and Equal and Splenda cant make syrup or bulk at all. Monkfruit has Erythritol...
