Old Fashioned Dark Chocolate Pudding

I had leftover milk and cream from my 2 week "Dairy Fest" So I made this to use the rest up.
I used Erythritol and ChocoRite Sugarfree dark Chocolate in mine. YUM!
Old Fashioned Dark Chocolate Pudding

1/3 cup Corn Starch or Potato Starch
2-1/2 cups Milk
1/2 cup Cream
2 Egg Yolks
2 oz Chopped Dark Chocolate (regular or sugarfree)
3 T Valrhona Cocoa Powder 
1/2 cup Sugar or Erythritol
Dash Vanilla
1/2 t salt
A Little melted butter
Plastic Wrap

Melt the butter and set aside.

Whisk the milk, cream, egg yolks, salt, vanilla, sugar and corn starch together thorougly.
Pour into the pot, add the cocoa and chocolate and whisk constantly over medium-high heat until it thickens (about 8 mins)
Quickly turn off heat, swirl on butter and cover the surface with the plastic wrap, to prevent a skin.
Let cool a lil and eat warm or cool completely as a cold dessert with whipped cream.



This is why you swirl the butter, so the skin wont even form on the plastic wrap
After removing the plastic wrap, whisk rapidly and serve.
