Candied Halos/Cuties

Before and After Candying


Candied Halos/Cuties
10 to 15 Tiny Haloes or Cuties
Thin Sewing Needle
Lots of Sugar
Water

DAY ONE

Take a very thin sewing needle and prick the Haloes/Cuties all over (about 20 different spots)
Throw them in a pot of boiling water and boil for 60 seconds.
Remove them and place into a bowl of Ice Water.

Meanwhile, in a large pot,
Pour 1-1/4 cups White Sugar
and
2-1/2 Cups water and boil, for 5 minutes.
Turn off the heat and spoon your Haloes/Cuties into the syrup, Place a ceramic plate over top the fruit to keep them submerged and cover and let sit at the back of the stove for 24 hours

DAY TWO

After 24 hours, use a slotted spoon and remove the Haloes/Cuties to a plate, and add 1/2 cup additional sugar to the syrup and boil again for a minute.  Turn off the heat and place the Haloes/Cuties back in the syrup, cover with the plate and lid and let sit again 24 hours

DAY THREE

After 24 hours, use a slotted spoon and remove the Haloes/Cuties to a plate, and add 1/2 cup additional sugar to the syrup and boil again for a minute.  Turn off the heat and place the Haloes/Cuties back in the syrup, cover with the plate and lid and let sit again 24 hours

DAY FOUR

After 24 hours, use a slotted spoon and remove the Haloes/Cuties to a plate, and add 1/2 cup additional sugar to the syrup and boil again for a minute.  Turn off the heat and place the Haloes/Cuties back in the syrup, cover with the plate and lid and let sit again 24 hours

DAY FIVE

After 24 hours, use a slotted spoon and remove the Haloes/Cuties to a plate, and add 1 cup additional sugar to the syrup and place the Haloes/Cuties back in the syrup, boil in the syrup 3 minutes, then remove from heat, cover with the plate and lid and let sit 48 hours

DAY SIX

After 48 hours, use a slotted spoon and remove the Haloes/Cuties to a plate, and add 1 cup additional sugar to the syrup and place the Haloes/Cuties back in the syrup, boil in the syrup 3 minutes, then remove from heat, cover with the plate and lid and let sit again 48 hours


DAY SEVEN

After 48 hours, place the post with the fruit in it back over high flame and let the fruit boil 5 minutes. Then turn off heat and spoon the fruit into a large glass canning jar and pour over the syrup (do not refrigerate until the fruit is completely cool) OR drain the Haloes/Cuties onto a rack over a baking sheet and let dry out.
