Retro Recipe Redo #22 Three Little Piggies Meat Loaf With Coconut Mashed Potatoes & Spicy Hawaiian S&S Sauce


The meatloaf, sauce, coconut mashed taters and a carrot lettuce salad (Kewpie Lemon Dressing on the side)

Retro Recipe Redo #22 Three Little Piggies Meat Loaf With Coconut Mashed Potatoes & Spicy Hawaiian S&S Sauce

1 lb cooked hamsteak, broken up
1 lb lean pork chops, cut into 1 inch pieces
1 box fully cooked bacon, cut intro 1 inch pieces
3/4 Cup Milk
5 slices bread, Regular or Keto
1 Egg
1/2 cup Brown Sweetener (sugar or keto sweetener -no splenda)
1/3-1/2 cup Any Honey Mustard
1 t salt
1/4 Pepper 

 

Put the ham, pork and bacon in a food processor and process until smooth

Transfer to a large bowl and then put everything else in the food processor and process until smooth and then using your hands combine both mixtures in the bowl

Mound on a baking dish and bake at 350F till a thermometer reads 160F

Slice and serve with the sauce

 
 Spicy Hawaiian S&S Sauce
 
1/2 cup brown sugar, packed
1 T Clear Jel (or cornstarch)
1 can pineapple in juice, any style
1/3 cup Hot Pickled Pepper Jar Brine
1/4 cup white vinegar  
Liquid Smoke
2 T soy sauce
1 Finely minced Jalapeno

Mix the sugar and ClearJel together in a pot, then add the pineapple, Brine and soy sauce, and use an immersion blender to liquify it all, then add the Jalapeno and boil 5-8 mins to cook the jalapeno. 
Serve


Coconut Mashed Potatoes

1 lb  peeled Potatoes
1 box Aroy coconut milk
4 T butter
salt and pepper
Crispy Fried Onions. (to garnish)
 
 
Boil the potatoes in salted water till fork tender. Drain and mash with the rest.  Serve hot with the crispy onions and more butter
