Cultured Butter

2 Cups or more Yogurt For Harlots
Salt or not

 Make sure EVERYTHING IS COLD, cream yogurt, bowl and beaters.

It is just in the whipped cream stage here

Put the Yogurt For Harlots in a bowl, add 1 teaspoon Salt (if using) and whip on HIGH speed until you notice it starting to spit little bits of cream out onto the counter. It is now starting to become butter,

Cover it carefully with a kitchen towel and listen, when you hear it sounding SLOPPY, turn the machine off.

And uncover. This is what you should see

Place a fine strainer over a receptacle and spoon the butter into the strainer and allow the BUTTERMILK to drain into the bowl (DO NOT PRESS DOWN ON THE BUTTER!), after 5 minutes place the butter BACK into the bowl and beat again to remove and loosen more Buttermilk and strain again. Repeat two more times till you remove the majority of the buttermilk.

 After first strain
 After second rebeat
 After third rebeat

Spoon the Butter into a container, refrigerate and use within 2 weeks.


Save the buttermilk for the NEXT recipe.
