Diners Drive-Ins & Dives Recreations Hot Tomato Oil
I shrunk this recipe for home use.
1 cup olive oil
1/2 cup smashed garlic
In a small pot
Simmer low & slow over medium 15 mins
Strain the oil into a bowl and set aside BOTH the garlic and the oil.
Pour 2 cups of tomato pureee in the pot, bring up to a simmer
2 teaspoons salt
1 T honey
1/4 cup chili mixture
(I used a mix of half Sriracha and 1/2 Spicy Sweet Tabasco)
Then re-add the oil, mix and emulsify with a immersion blender
Then add the reserved garlic
Stir and serve on plates with crusty bread
