Spiced Peach Cobbler






Spiced Peach Cobbler

1/4 cup sugar
2 cups Selfrising flour
Splash Vanilla
1/4 teaspoon salt
1 Pint heavy cream

Mix the sugar and flour and slowly start adding the cream and mixing until it makes a sticky but cohesive dough, Stop adding cream.

Mix:

1 T cornstarch
with
1/4 cup peach brandy
and
2 T white vinegar

Toss
2 bags thawed frozen peaches, and their juice
with
1/2 to 2/3 cup sugar (I like mine less sweet)
1 teaspoon Cinnamon
1/4 teaspoon ground Cloves
1/4 teaspoon fresh grated nutmeg
Pour the brandy mixture over all and stir completely

Top with glops of the Biscuit mix and sprinkle with more sugar, bake in a 375 degree oven
for 35 minutes or until its hot and bubbly and the biscuits are golden!

If you have enough cream left over, whip it with some vanilla sugar and serve on top
