Corn Pancakes with Lime Avocado Butter & Coconut Rum Syrup




Sprinkled with Tajin


Corn Pancakes with Lime Avocado Butter


2 ripe avocados 
1 T Real Lime Lime Powder
1 stick butter
1/8 t salt

Put all of the above into a small bowl of a food processor and blend till silky smooth, Spoon onto plastic wrap in a log shape and roll up and twist the ends and refrigerate until the pancakes are done.
Place in the fridge if you arent making pancakes until the next day.

Then Whisk the following all together

1 cup Self Rising flour
1/2 cup corn meal
1/2 cup Frito powder (Fritos pulverized in a Vitamix from 1 minibag)
2 Eggs
1-1/2 cups milk
1/2 teaspoon salt
2 T oil

 and fry pancakes in a oiled skillet till all done, keep warm

Warm the following in a microwave until fluid and combined

1/2 can Coconut Beverage Cream
1/8th cup rum


Serve 3 hot pancakes on plates with a slice of avocado butter and the warm syrup..

Enjoy.
