Eggs Florentine







Eggs Florentine 

In a baking dish greased with butter
That you line with
1 package Frozen & Thawed Spinach ( or 1 bag Fresh baby Spinach nuked till wilted)
Squeezed and drained
Make 2 to 4 valleys to lay
2-4 Eggs
into...
Top with a mixture of
1 to 1/2 cup plain Greek yogurt or light sour cream
1/4 to 1/2 cup parmesan cheese
1/4 to 1/2 cup mozarella cheese
Ricotta (optional)
Salt and Pepper
Bake in a 400 degree oven until golden brown
