Crazy Corn Biscuits


I created this recipe as an ode to Pati Jinich's Crazy Corn that I love so much.


Crazy Corn Biscuits

1 Cup Self Rising Flour
1 Cup Fritos powder (Fritos cornchips pulverized in a Food processor or Vitamix)
1 t baking powder
1 cup Heavy Cream
1 Tablespoon Lime Zest
1 Tablespoon Tajin (NO SUBSTITUTIONS!!)

Mix all together.
Roll balls in your hand and place on a nonstick baking sheet and press down gently to make a burger shape.
Bake in a 400 degree oven 15 minutes or iintill they are slightly puffed up and golden.

While they are baking mix
1/2 cup crumbles Queso Fresco
&
1/2 cup mayo

 In a food processor till semi smooth, serve in a crock next to the biscuits for spreading.
Sprinkle with more Tajin


NO SUBSTITUTION ON THE FRITOS POWDER

Note: If you want these lighter, use 1/2 cup Fritos powder and 1/2 cup yellow cornmeal
