Sandwich Cake (AKA Smorgastarta)

Measure 7 cups of WHITE Whole Wheat flour into a plastic bowl
Add 1/2 cup of powdered milk & 2 teaspoons salt, stir set aside.

Put the dough hooks on your stand mixer then put 2 handfuls of sugar into the glass bowl on your mixer ....

Heat 4 cups water to 105-115 (test with a thermometer not your finger!)
Put 1/2 a cup into the bowl with the sugar and then sprinkle on 2 packs of yeast, and stir to dissolve.
Let sit till it bubbles or foams.

While the yeast is "proofing"

Melt 1/2 cup butter in a plastic bowl in a microwave, til its just melted. 

Pour 1/2 cup honey into the butter. Stir well, Add 2 cups of the warm water and mix well.

When the yeast is proofed, add the honey mixture, and then turn on the mixer on low, then slowly add the flour, and then slowly turn the power up to high and scrape the sides as you turn the bowl.

Let the machine knead the dough for 8 minutes.

Spray a large plastic bowl with olive oil Pam and dump the dough in and carefully turn it over so its all oiled, cover with a clean towel and place in a warm place ( I put it in my over stove microwave, the lights underneath generate just enough warmth to rise the dough sufficiently.

Let rise for 2 hours.

Take the bowl out, punch the dough with your hand till it deflates, then put the dough into one Pam sprayed Hefty Round Foil Casserole Pan

Re-cover with a towel and put in a warm place.
Let it rise til its overflowing the top of the pan.


Preheat your oven to 350 degrees
Then bake till a thermometer inserted inside the center reads 190 degrees.
About an hour.

Remove from oven to let cool completely.

When its completely cool, level off the top, and very carefully slice off the side crusts, keeping it rounded.

Slice carefully into 3 layers

Now you can construct your Masterpiece!

Whatever way you decide to decorate your sandwich cake with you need to buy a lot of whipped cream cheese, flavor it with onion salt or leave it plain, or mix with sour cream to lighten the texture

In between layers use smoked salmon, or other smoked fish, tuna salad, smoked whitefish or crab spread, egg salad. make sure the salads you make or buy arent chunky or have celery.

One layer should be protein then another layer should be vegetables such as avocado, radishes or cucumber, all sliced very thinly. Sprinkle avocado with lemon juice, to slow browning.

And lastly "frost" the outside and the top and decorate with tiny cooked shrimp, more radishes, cucumbers, and smoked salmon rosettes.

 Now those are all the Swedish version.

But you can do an Italian version with chicken, roasted peppers, olives, tomato skin roses etc. its up to you.

Mine was 3 bread slices, thinly cut, that gives me 3 layers, I put smoked salmon, avocado and cucumber layers. In the one above.
