Fauxtato Salad
2 lb Kohlrabi, peeled and diced into potato salad size chunks
1 t Baking Soda
1/2 t Salt
Water to cover
Put all of the above into a pot and boil till al dente (almost cooked completely)
Drain, rinse 4 times, then cool on a plate in the fridge
Dressing
1/3 cup Mayo
1/2 t Salt
1/4 t Pepper
1 T French's mustard
2 Hard Boiled Eggs, chopped
1/4 t dried Onion
1 stalk celery diced
1/4 t Amoretti Potato Flavor
Mix this in a bowl and add the cooled, cooked Kohlrabi.
Chill and serve
