Keto / LowCarb Spaetzle With Cheese
 
One box King Arthur Keto Pizza Dough (use the yeast for something else)
2 eggs
1/3 to 1/2 cup milk 
1/2 t salt
 
Put a pot of water on the stove to boil, add some salt if desired.
Measure 1 cup of the pizza dough flour into a bowl, mix with the salt
(Use the remaining cup for your next batch)
In another bowl whisk up the eggs and milk
Add the flour to the eggs and mix. 
It should be the consistency of Corn Dog batter.
Get a Spaetzle maker and pour in the batter over the pot of water and let drip into the water until all the batter is gone. Let the Spaetzle boil for 1 minute, then drain into a colander

Cheese Sauce

4 slices Muenster
1 cup Milk
2 T flour
2 T butter
Dash Nutmeg 
1/2 t dried onion flakes

Melt the butter in a pot, add the flour and let bubble, whisk in the milk and cheese, add the Nutmeg and Onion. By then the sauce should be smooth and thick. Season with salt and pepper. Serve over the Spaetzle. If desired add Mushrooms.
