The Most Authentic Eggless Vegan Mayo Ever

Once again, a Vegan YouTube cook has created a recipe for vegan mayo which is ridiculous.

If you have never tasted real mayo, you really cannot know what real mayo should taste like. I see a ton of Indian Vegetarian cooks attempting to create mayo but falling very short.
India has no Yellow or Dijon Mustard or yellow spicy dry mustard powder.
Grinding up black mustard seeds is not in any way shape or form like any of those.
If they dont know what eggs taste like they cannot replicate that eggy flavor in mayo.
A soymilk, oil emulsion is not mayo. its just a weird spread.

Unlike what Varun Imdar says, an Emulsion is NOT a FAT binding with FAT, it is a Fat Binding with a water based liquid. Its the acid that allows the protein in the eggs to allow the oil to EMULSIFY.

My vegan mayo is a classic WHOLE EGG version

Lets explore MY ingredient list

1/4 cup warm water HYDRATES THE BESAN
4 T Besan IMITATES 2 EGG YOLKS
1 c lite Olive Oil OIL
1 T Vinegar ADDS ZESTINESS
1 T Lemon Juice ADDS ZESTINESS AND FRESHNESS
1 T Yellow Mustard ADDS DEPTH
1 t Salt SALT
Pepper PEPPER
Dash Paprika ALL MAYO HAS A LITTLE PAPRIKA
1/8th to 1/2 t Black Salt REPLICATES THAT EGGY EGGYOLK SULFURY TASTES

Mix the Water, Salt, Pepper, Vinegar, Lemon Juice, Mustard, Paprika, Black Salt and BESAN in an Immersion Blender cup thoroughly and let stand for 10 minutes to hydrate the Besan. It shouldnt be a thick paste, if it is add 1-2 T water Then Put the blender in the cup and turn it on and slowly pour in the oil until it thickens.
