New Series -- The 7-11 Gourmet Part 1

So years ago I lost my drivers license and couldnt go anywhere. Ill cop to driving my Jeep to the smACME Market at night but once the snows and ice came I could only walk up to the 7-11 to get food, so this is how this series came about...

You too can create a nutritious "Gourmet" meal from things commonly sold at 7-11, in a pinch, if 7-11 is the only place around...

Meal #1

Whole Wheat Low Fat Chicken Tacos


Screw those white flour tortillas most 7-11s sell!

FIRST!

Make some healthy Mock Guac -- 7-11 Style


Mock Guac -- 7-11 Version

This is a low fat version of Guacamole, Jarred Guac at 7-11 is full of hydrogenated oil, yuk. Make this instead, it counts as 2-3 servings of veggies.

1 can of Blue Lake Green Beans, drained thoroughly
Garlic Salt
Onion Salt
2 T canned chopped tomatoes
1/2 t ground cumin
1 heaping T sour cream
2 packets Lemon Juice from the 7-11 hot Coffee & Tea area.
Salt and Pepper
Splash white vinegar
Chopped pickled jalapeno
Tabasco

Mash the green beans in a bowl with a potato masher (never a blender) If not eating right away place this mash back into a strainer for an hour to let more moisture drain away.
Add the next 9 ingredients, taste
Then add the Jalapenos and Tabasco to taste.
Serve with baked tortilla chips or over the 7-11 Gourmet Chicken Tacos (recipe follows)


SECOND!

Buy a loaf of whole wheat bread and cut rounds out of slices and roll out with a rolling pin or a large wine bottle. Spray a pan with Pam and brown your stack of "Tortillas" on both sides till toasty. stack on a plate and keep warm.

Most 7-11s sell big boxes of frozen Banquet Fried Chicken, buy one, thaw or bake until you can remove and discard the breading and then shred the meat, 


Fry in a pan and add some taco seasoning

THIRD!

Serve inside the warm "Tortillas" with the Mock Guac, Salsa, Sour Cream, (as shown above) and some cheese (optional)
