Indian Style Amaranth Leaves



Amaranth is one of the smallest grains in the world. 

The plant that grows it has beautiful big hunter green leaves with centers of dark fuchsia.

And it makes a simply delicious, un-"gamey" curry.








Every recipe for Thotakura Curry on the internet is the same.
Washed, chopped and boiled Amaranth leaves stir fried with mustard seed, curry leaves, cumin seed,.chilis, onion, garlic, lentils, ginger, asafoetida and turmeric in oil for 8 minutes




I know its not a visually appealing dish (cooked leafy green dishes rarely are) but honestly this is one of my favorite dishes. 

So good with rice
