Three Italian Inspired Dips, Italian Queso, Italian Sausage Sandwich Dip & Italian Hummus 
With 3 Kinds Of Chips To Dip Into Them...
Pasta Chips, Artichoke Chips And Garlic Butter Parmesan Polenta Chips 

 Lets Make It!

Make the chips first

 Pasta Chips

Fresh Lasagna Pasta Sheets (such as Contadina), cut into long strips And Fried

Artichoke Bottom Chips 

Buy Them Here

 Polenta Chips

2-1/2 cups yellow Masa 

1/3 cup Polenta

1/3 cup powdered Fritos 
 
Put these in a Vitamix and process until very fine and completely mixed
 
 Add 

1 t salt
1/3 cup butter, melted
2 T Olive Oil
2 t (or more) Garlic Powder
1 cup grated Parmesan
 
Combine all of these first.
 
 Then Lastly add,
2 cups very hot water 
 
Make a dough and then tortillas
(Roll or Press)
then pan roast them then cut into triangles
and fry till crisp 
This will make at least 2 giant bowls of Buttery, Garlicky, Polenta Tortilla Chips 

 Lets Make The Dips!

Italian Queso 
 
1 pound White Velveeta
1/4 cup Sun Dried Tomatoes, chopped
5-6 chopped Pepperoncini
1 T Fresh Oregano
1 sliced small Onion and 3 chopped Garlic cloves, sauteed
2 T chopped Fresh Basil 
 
Melt the Velveeta, and add the rest. 

 Italian Hummus

1 can White Cannelini Beans, drained
1/4 cup Olive Oil 
2 cloves chopped Garlic 
1/3 cup Cashews 
1/4 cup Pasta Sauce
2-3 T Pepperoncini Brine 
Salt & Pepper 
 
Parm to top 
 
Buzz it all in a food processor 

Italian Sausage Sandwich Dip
 
2 small or 1 large links Sweet Italian Sausage, taken out of the casings and fried and chopped into taco meat texture
1/2 red pepper, sliced
1/2 yellow pepper , sliced
1/2 green pepper, sliced
1/2 orange pepper, sliced
1 small onion, sliced
1 t oregano
1 t Fennel seed 
Salt and Pepper 
2 T olive oil
2 T butter
Franks Hot Sauce
Mozz 
 
Fry the veggies in the oil and butter, Fennel Seed, salt and pepper, till soft and translucent. Add the Oregano and hot sauce, and fry a bit more,
Buzz, still hot with the Mozz in a food processor  
Put it in a bowl and mix in the sausage,
Serve Hot 
 
 

To Serve
 
Heat up the Queso and Sausage Dips and put them in heated serving bowls
Put the Hummus in a bowl and sprinkle with Parm 
Serve with the chips 
and
Red Pepper Flakes in a shaker and various olives, marinated Lupini beans and pickled peppers 
and a glass of wine
