Taco Pav Bhaji (A Delicious Way To Get The Kids To Eat LOTS Of Veggies, And You Will Enjoy It Too. Pass The Tabasco And Tajin)

 

Pav Bhaji is a very popular Indian food, its basically mashed spiced and heavily buttered veggies served with a soft whole wheat bun, chopped raw red onion, more butter and a lemon wedge. Its SO good. I made an Indian-Mexican Fusion Pav Bhaji. Its great for picky kids who say they hate veggies but love Tacos. To eat just dip bits of the Pav (Bun) in and eat. They will never know its got all those veggies in it.

Taco Bhaji

1 can dark red kidney beans
1 can chickpeas
1 medium russet potato scrubbed and chopped
1 can beets drained
1 head cauliflower separated into florets
1 bag baby carrots
3 tomatoes, cored and chopped
1/2 bag frozen peas
2 poblano peppers, seeded and chopped
1 can low sodium blue lake green beans drained
1/2 t salt
2 cups water

Put everything in an electric pressure cooker and cook on medium and the bean setting for 30 minutes.

Meanwhile
 
Make the Seasoning 
 
3 Guajillo Chilis, stemmed
1 huge Vidalia Onion, sliced
2 cloves garlic, chopped
3 packets Taco Bell Taco Seasoning 
1/4 cup lime juice
1/2 stick butter or vegan butter

Soak the guajillo chilis in hot boiling water, deseed them when they rehydrate

While they are soaking, fry 2 the onions in olive oil til golden, add the drained chilis and the garlic and stir fry about 2 mins then add the Taco Bell Taco seasoning and stir till the onion is coated. Add 1/2 cup water Set aside


When pressure in the pot releases, open the pot



and add the onion mixture and mash to smithereens with a potato masher or puree with an immersion blender or Vitamix in batches, till thick hummus like.
Add the lime juice and butter

Stir thoroughly.



Serve on a plate with lime wedges and shredded cheese, Sour Cream and/or extra butter a few chopped red onions, Tajin and 1 or 2 Corn Pav (buns)...
 
Serve with unsweet cornbread or any one of these Pillsbury corn breads

Tell your kids its TACO HUMMUS!

Ta-da! you got your kids to eat tons of veggies.
