Pipa Pipa "Fritters"

 
 
 
 These have such an interesting Mochi Texture, so good!
 Pipa Pipa "Fritters"
 
I named these after the Pipa Pipa toad that gives birth from holes in her back 
 
2 cups cooked Dark Brown Boba
4 garlic clove, finely chopped
1 red chili, finely chopped
6 scallions, finely chopped
1 t Chopped fresh Ginger 
2 T soy sauce
2 Cubes Vermont Curry
3/4 cup MOCHIKO rice flour
2 eggs, beaten
1/4 cup water
1 t salt

Put the Garlic, Soy Sauce, Curry, Ginger, Eggs and water in a food processor til it makes a paste, then mix in the Rice Flour.

 

Then heat up oil in a deep fryer and then mix in the Boba, Chili and Scallions and then drop handfuls into the hot oil and fry till golden. About 6 minutes.

 Serve with Nuoc Cham
