Foraging #4 Wild Mugwort Jelly In Coconut Soup

2 cups triple washed Wild Mugwort Leaves
2/3rd cup Water

Put the Mugwort in a blender or Vitamix with 1/3 cup water and blend till smooth and strain over a bowl. Discard pulp

4 cups Water
1 cup Sugar
1/2  package China Grass (aka Agar Agar threads)

Soak the China Grass in water for 20 mins

Set a pot of water on the stove over high heat and add the squeezed out China Grass and the sugar. let it come to the boil and dissolve the China Grass and sugar. Turn off the heat and let cool slightly and stir in the Mugwort liquid and pour into a square pan. And refrigerate.
When set cut into cubes.

Next, make the soup 

Fresh Coconut Chunks from 1 whole Coconut
3 cups Boiling water
1 cup Powdered Sugar

In a Vitamix place the coconut chunks  (it doesnt matter if they have brown skin attached) 3 cups water and put a towel over the top of the lid of the Vitamix and process on high for 2 minutes. Strain into a bowl (discard pulp) and add the powdered sugar.

Serve the Mugwort cubes in a bowl of the Coconut soup.

You will know its Mugwort both by its white underleaves and by its smell when you rub a leaf in your fingers, its very herbal and almost like Rosemary and Pine.
