Mini Crazy Corn "Pops"




Crazy Corn without having to wipe your chin!


Mini Crazy Corn "Pops" 

1/2  pound Raw Fresh Mini Corn Cobs Skewer all the mini cobs, on the bottom (if desired)

 Dipping sauce

1/2 cup Mayo
1 t Tajin
1/4 cup Queso Fresco
Enough lime juice to get the blender moving.

 Place all in a blender and process til smooth.

Main Ingredients

3/4th  cup flour
1 t melted butter     
1/2 cup UNSWEETENED Lime Seltzer/Sparkling Water
Pinch of baking powder
1 t Tajin

Mix the flour, butter and Tajin, baking powder, then add the Seltzer.

Heat the oil to 375oF

Dip the corns in the batter

Fry the corns in batches, till lightly golden

Drain

Serve with a squeeze of LIME, extra crumbled Queso Fresco and Tajin and the sauce
