Creamy Vegan Scrambled Eggs

If youve missed the creamy Chef Pepin style scrambled eggs since you've become vegan, this recipe is for you. You cannot tell the difference between real eggs or these vegan eggs.

Creamy Vegan Scrambled Eggs

Grind the following ingredients in a Vitamix until a smooth mixture is formed

1/2 cup raw cashews soaked overnight, drained
1/2 cup water
1 teaspoon Black Salt (from Indian mkts)
1/2 teaspoon salt 
1/4 teaspoon fresh ground pepper
1/2 teaspoon turmeric

Add it to 
1 block Extra Firm Tofu, crumbled finely, patted dry
 in a bowl, mix thoroughly, then warm in a frying pan with some Earth Balance Vegan Butter.

Serve with toast points
