Retro Recipe Redo Series #1 Salad Bowl Aspic




Tomato Aspic (spicy tomato gelatin) used to be the Queen of the Luncheon table. At every ladies luncheon table there was one front and center. 
Now?
You cant even find canned Aspics at your grocer.

So I decided to Redo this Retro Recipe and make Aspic into a whole salad.

Salad Bowl Aspic
This recipe is in 3 components, do each separately.

Spicy Tomato

1/3rd cup water
2 Envelopes Knox
1 can V8
Tabasco

In a square plastic container put the water, then sprinkle the Knox over top, let sit to soften for 10 minutes. Then put it in the microwave for 1 minute then take it out and stir it, look to see if all the Knox granules are dissolved, then pour in the V8 and stir very well and add Tabasco to taste. Refrigerate flat till firm. Take out and cut into squares, place in another container, wash out the container then go on to the next...

Carrot

1/3rd cup water
2 Envelopes Knox
1 small bottle Carrot Juice

In a square plastic container put the water, then sprinkle the Knox over top, let sit to soften for 10 minutes. Then put it in the microwave for 1 minute then take it out and stir it, look to see if all the Knox granules are dissolved, then pour in the Carrot Juice and stir very well. Refrigerate flat till firm. Take out and cut into squares, place in the same container as the V8, wash out the container then go on to the next...

Lettuce/Spinach/Onion

1/3 cup water
2 envelopes Knox
1 head of Iceberg Lettuce
1/2 bag baby spinach
1/2 a small sweet onion
1 big spoonful mayo
2 T white vinegar
1 t salt
1/2 t fg pepper

Put the lettuce spinach, and onion in a Vitamix, process till liquified, add mayo and s&p and vinegar.In a square plastic container put the water, then sprinkle the Knox over top, let sit to soften for 10 minutes. Then put it in the microwave for 1 minute then take it out and stir it, look to see if all the Knox granules are dissolved, then pour in the liquidized lettuce puree and stir very well.  you wont use it all. Refrigerate flat till firm. Take out and cut into squares, place in the same container with the other two, gently toss to combine.

Serve in bowls drizzled with olive oil and redwine vinegar
Or serve with Ranch Dressing flavored mayo
