White Pumpkin Drop Donuts
1-1/4 cup mashed white pumpkin (try to get it on the dry side)
1/2 cup Pumpkin Spice Coffee creamer
2 eggs
1 T melted butter
1 cups sugar
1 T baking powder
3 cups flour
oil for frying
Heat sufficient oil in a pan for frying. To 320oF
Whisk the sugar, flour and and baking powder together, set aside.
Mix all the wet ingredients then add the dry.
With greased gloves drop donut hole sized balls carefully into the oil,
Turn over when one side gets done.
And place on paper towels to drain.
Dust with Orange Sparkly Powdered Sugar
Powdered Sugar
1-2 T Orange edible Disco Dust
Mix and put in a shaker jar and shake on.
Wash and cut a white pumpkin in half, deseed, place cut side down, on a baking sheet and roast in a 350oF oven till its easily pierced with a fork.
Scrape out the meat from the skin and place in a colander to drain as much juice out as you can.
Puree in a food processor and use.
And again, place in a paper towel lined colander and allow to drip out water till its very thick.
