So, so good! Sweet, creamy and savory all in one
Curried Carrot Cheese Soup
1 bag shredded carrots
1 onion, chopped
4 cups 2% milk
2 cups shredded cheddar
1/4 cup butter
1/4 cup flour
1 t curry powder
1 T Worcestershire sauce
Olive oil
black pepper
Salt
Cook the carrots in a pan in olive oil till everything is tender.
Place them on a plate, then sautee the onion till translucent.
Add them to the plate.
Put the butter in a pot to melt, then add the flour until it bubbles
Add the milk, and simmer about 5 mins
Add the cheese and stir till thickened
Add in the curry powder, Worcestershire, carrots and onion and season with Salt and Pepper.
Bring to a simmer for maybe 2 minutes then serve.
