Corn Dutch Baby With Deconstructed Salsa
Assemble the Deconstructed Salsa
Slice an avocado
chop 1 tomatoes
1/2 red bell pepper
1/4 a Jalapeno, lightly steamed, minced
A smattering of corn
Cilantro
Tajin
Batter
1/2 cup flour
3/4 cup milk
1/2 t salt
3 eggs
a dash Cayenne
1/4 t cumin
3/4 cup fresh sweet corn (or Frozen if fresh isnt available)
Preheat an oven to 450oF
Put a frying pan in the oven to get hot.
Puree all the Batter ingredients
Add a T of butter to the pan, and swirl to coat the pan, then pour in the batter.
Bake for 15 mins until brown and puffy.
Artfully arrange the "salsa" over the top, sprinkle with Tajin
Serve.
