Avocado Mojito Cheesecake (No Bake)
1 premade Graham or Shortbread pie crust
2 Large Avocados
1 package Cream Cheese, softened
1 can Condensed milk
2 T Lime Powder
1/8 t mint extract
1 teaspoon Amoretti Rum flavor
1 pack plain gelatin
1/4 cup water
Sprinkle the gelatin over the water in a small bowl to soften 5 mins
then nuke it for 15-30 secs to dissolve.
Set aside briefly.
Beat the rest of the ingredients in a bowl with a handmixer and beat in the gelatin.
Keep beating till it gets fluffy then pour into the crust and chill until set. Serve.
