Pesto Asparagus Omelet Pinwheels

 Is that pesto? Is that pesto in this omelet? Oh its also asparagus!

 Pesto Asparagus Omelet Pinwheels


8 eggs, divided
1/3 cup Aunt Jemima Complete Pancake mix
1/2 t salt
1/3 cup water
3 T Original Pesto
Shredded White Cheese (not feta or moz)
1 bunch Asparagus

Preheat oven to 350oF
Spray grease 1 13x9 pan

Whip the egg whites and salt till stiff peaks form
Combine the Yolks, Pancake mix and Pesto and water in another bowl and whip till lighter in color.
Fold the whites in, Then pour into the pan and bake for 15 mins.
 
Meanwhile, steam the asparagus till cooked, drain on paper towels
 
Remove the eggs from the oven and IMMEDIATELY sprinkle with the cheese to melt, and let cool.
Place the asparagus on top of the cheese along the 13" side and roll up the entire thing, then slice into 
pinwheels and serve
