THE BEST Super Delicious Low Carb Mashed Fauxtatoes -- Less than 1 gm Carbs per serving

 

I was really thinking these were gonna turn out like crap, but when I took a bite with butter on top, I was blown away. I really will never miss mashed potatoes again. Now I need to figure out how to make these into Fries....

THE BEST Super Delicious Low Carb Mashed Fauxtatoes

Lupini Beans are ZERO carbs, and when pureed they have the same texture as potatoes.
Do NOT use DRIED Lupinis, unless you know how to prepare them.
 
1 large jar (24 oz) Flora Lupini beans
1 cup hot steamed Cauliflower/Turnip or Kohlrabi (it makes them less wallpaper pasty)
1 cup milk or "unsweetened veg or nut milk" (adjust for consistency) *
1/2 stick butter, melted
salt and pepper

Drain the beans, then soak for 2 hours in 5 changes of water to remove the briny taste
Then put everything in a Vitamix and process till smooth.
The Vitamix will make them HOT.
 
Serve! 

* Whole Cows milk will make this 3.4 carbs per serving
Cashew Milk will make it 1.2 carbs per serving

To make these thicker use 1/2 to 2/3rd cup of water and the recommended amount of powdered Cashew, Almond, Coconut, or Cows Milk to make 1 cup liquid milk.
You can get the powder on Amazon.



You can also make this into a Twice Baked Fauxtato
 

Mix it with

Shredded cheese
Bacon bits or minced ham
Butter 
Salt and Pepper

and heat in the microwave until its all melted and then spoon into ramekins and smooth out the tops and sprinkle with paprika. 
Bake on 350 about 10 mins
Then serve with sour cream and chives
