Hoagie Soup



Hoagie Soup

1/2 a small head of Cauliflower, broken up
1 sliced Onion
1 green pepper, chopped
1 chopped Tomato
2 cups Shredded Cabbage or Escarole
1/2 pound chopped hard salami
1/2 pound chopped ham
1/2 pound chopped hot capicola
2 T Italian Dressing Mix
1 box Chicken Broth
1 jar Sweet and Hot Peppers, pureed
sliced Provolone
crusty Italian bread

Saute the onion and green pepper in olive oil until the rawness is just taken away.
Remove from the pot and set aside
Fry the meats in more olive oil until they get a tiny bit seared.
Add the chicken broth, Italian dressing mix, pureed peppers, tomato and cabbage and simmer
until the cauliflower is tender. Add the onion and green pepper back to the pot and stir.

Ladle into soup mugs, top with toasted Italian bread and cover with provolone and toast under broiler.
Serve.
