Breakfast Jelly Roll

  8 eggs, divided

1/3 cup Aunt Jemima Complete Pancake mix

1/2 t salt

Pepper

1/3 cup water

Preheat oven to 350oF

Spray grease 1 9X13 inch pan

Whip the egg whites and salt till stiff peaks form

Combine the Yolks, Pancake mix and water in another bowl and whip till lighter in color.

Fold the whites in, Then pour into a jelly roll pan and bake until light and browned, 15 mins.

1 large onion, diced

1 large green pepper, diced

1/2 pound turkey ham, diced

Cheddar Cheese

Meanwhile fry Diced ham, Green peppers and onions in some oil in a pan till tender.

 

When the egg "cake" is done, immediately cover the "cake" with cheese and let it melt. Then cover that with the ham mixture

Roll up along the 13" side and then slice into 

pinwheels and serve
