Restaurant Recreations # 5 Assi Plaza Bakery Mocha Corn Layer Cake With Pie (옥수수 케이크 , 모카 케이크 와 파이)

Not as fluffy as Assi Plazas but just as good.
Restaurant Recreations # 5 Assi Plaza Bakery Mocha Corn Layer Cake With Pie
(옥수수 케이크 , 모카 케이크 와 파이)

Roast 1 cup corn meal in a hot non stick pan, stirring constantly till it is visibly toasted and fragrant.
Turn off heat and spread it on a plate to cool down and stop the toasting.
When it is cool place it in a Vitamix on Variable and #1 and switch it on and slowly turn it up to 10, let it process 2 minutes.
 Turn off.
    1 cup sugar
    1 stick butter, softened
    2 eggs
    2 t Vanilla
1/2 cup of the roasted Yellow Corn Meal (above)
    1 cup flour
    3 t baking powder
    1/2 cup milk

Preheat the oven to 350oF
Grease a square pan

Mix the Corn Flour, Flour, and Baking Powder, in a bowl

Cream the butter and sugar and milk and eggs and Vanilla in another bowl, then mix BOTH together.

Pour it into the pan and bake for 30 mins or until a toothpick inserted in the center comes out clean.

Remove, and cool completely.
Slice in two layers.

Since this is a complicated recipe, I decided to make the Mocha part simple.

I used the same square pan to make it as I baked the corncake in, I just added 2 t instant coffee and 2 t Valrhona Cocoa Powder and greased the pan, baked it and cooled it.
(Use the frosting bag for something else)

Okay now that the cakes are baked and cooled lets move on to the "PIE" part.

In a lot of Asian desserts "PIE" is basically crisped up Filo/Phyllo dough. So for this recipe you need 4 sheets of Phyllo, the same size as the cakes.
Cut the stack of 4 the size of the cakes, then divide the stacks in 2 stacks of 2.
brush all layers with a small thin film of melted butter and restack.
Place on a cookie sheet and bake in a 350oF just till crisp and very lightly golden.
Remove and let cool.

Make the thin filling

2 Sticks Unsalted Butter, softened
1/4 cup Confectioners sugar

Whip up the butter till its almost completely white and super fluffy, add the sugar and whip till combined

Spread Filling on the cut side of the top of the corn cake

Let "settle" for a few hours, then slice into 8 pieces and eat.
Serve
