Pecan Butter Cookies

Pecan Butter Cookies

The reason you dont see too many pecan butter cookies is cause Pecans are VERY OILY nuts and the cookies turn out greasy. Pecans are also very expensive.

But Ive figured out a way to make them non greasy.
BUT
It takes a month.

Lets make the defatted pecan butter first.

4 cans roasted pecans

Put all the pecans in a Vitamix
Set it on Variable and #1, switch it on and slowly put it up to #10
Let it work until its a smooth luxurious nut butter.
Pour it into a jar and let sit for a month until a lot of the oil rises to the top.
Pour this oil into another container (its great on salads)


See how oily it still is even with 1/3rd the oil removed?

ANDDDDD

Lets make some cookies

    1-1/2 cup pecan butter
    1 cup brown sugar, packed
    1 stick butter, slightly softened
    1 egg
    1-1/2 cups flour
    1 t. baking powder

Preheat the oven to 350oF

Mix the flour and Baking Powder

Then beat together the rest of the ingredients with a hand mixer and then mix it all together into a dough.

Cover your cookie sheets with parchment.

Decide what size cookies you want,

Oreo sized you can fit 12 per sheet
Oatmeal cookie sized? 6 per sheet
Roll appropriate sized balls and flatten and put a thumbprint in the middle instead of the fork, signifying peanut butter cookies.

Bake 20 minutes

Cool on a rack and eat.
